Tomato Paste Manufacturing
Tomato Paste Manufacturing ProcessTomato paste is a concentrated product made from fresh tomatoes, widely used in cooking, sauces, and food processing. The manufacturing process involves several key steps to ensure quality, shelf stability, and flavor retention.1. Tomato Selection and Harvesting The process begins with selecting high-quality, ripe tomatoes with high solids content (Brix value). Tomatoes are harvested at peak ripeness to ensure optimal flavor and color. They are transported quickly to processing facilities to minimize spoilage.2. Washing and Sorting Upon arrival, tomatoes undergo thorough washing to remove dirt, debris, and pesticides. They are then sorted to eliminate damaged or unripe fruits, ensuring only the best tomatoes proceed to processing.3. Crushing and Pre-Heating The cleaned tomatoes are crushed into a pulp using mechanical crushers. The pulp is pre-heated to around 60–70°C (140–160°F) to inactivate enzymes that could degrade color and flavor. This step also helps in breaking down cell walls for better juice extraction.4. Juice Extraction and Pulp Removal The heated pulp passes through a finisher or pulper to separate seeds and skins from the juice. The extracted juice is then screened to remove any remaining solids, resulting in a smooth liquid.5. Evaporation and Concentration The tomato juice is concentrated in multi-stage evaporators under vacuum to reduce water content. This step increases the solids concentration (typically to 28–32% Brix for single-strength paste or higher for double/triple-strength). Low-temperature evaporation preserves flavor and nutrients.6. Sterilization and Packaging The concentrated paste is sterilized at high temperatures (around 90–95°C or 194–203°F) to kill microorganisms. It is then hot-filled into sterile containers like aseptic bags, cans, or drums to maintain shelf stability. Some paste undergoes further processing into powder or diced forms.7. Cooling and Storage Packaged tomato paste is rapidly cooled to room temperature to prevent overcooking. It is stored in a cool, dry environment until distribution.Quality Control and Standards Throughout production, parameters like pH, Brix level, color, and viscosity are monitored. Paste must meet food safety regulations (e.g., low microbial counts, no additives in pure products). Some manufacturers add salt or citric acid for preservation or flavor enhancement.Applications Tomato paste is a versatile ingredient in sauces, soups, pizzas, and ready-to-eat meals. Its concentrated form reduces shipping costs and extends shelf life compared to fresh tomatoes. The entire process emphasizes efficiency, hygiene, and preservation of natural tomato qualities, making tomato paste a staple in global cuisine.
